The short answer

Patina is a thin, stable layer of dark oxide that forms on carbon steel as it reacts with food acids and moisture. It is not rust — it is grey, blue or black, sits flush with the steel, and actually slows further corrosion. Most modern Japanese-steel kitchen knives, including VG10 and AUS-10 Damascus, are stainless and will never develop a true patina. If a stainless blade has gone dark or spotty, that is staining or the beginning of rust, and it should be cleaned off.

Ask two cooks about patina and you will get two answers. One will tell you it is the mark of a blade that has been used properly. The other will tell you their knife is going rusty and ask how to scrub it off.

Both can be right, because they are usually talking about two different things happening to two different steels. This guide sorts out which is which, what patina actually does to a blade, and what to do about the dark marks you are looking at right now.

What patina actually is

Patina is oxidation — the same broad process as rust — but it stops in a different place. When bare carbon steel meets acid (from onions, tomatoes, citrus, meat) and a little moisture, iron at the surface converts into a tight, dark, chemically stable oxide. That layer bonds to the steel, sits flush with it, and once formed it makes it harder for oxygen and water to reach the metal underneath.

The colour depends on what the blade has been cutting and for how long. A new patina often looks pale grey or straw. With use it deepens through blue-grey and mottled brown to near-black. Some blades end up with a marbled, cloudy finish that no two knives share — which is a large part of the appeal.

Crucially, patina is a surface phenomenon, measured in fractions of a micron. It does not change the hardness, toughness or edge retention of the steel beneath it, and it does not make a blade brittle. Anything you read to the contrary is confusing patina with deep pitting corrosion, which is a different and genuinely damaging thing.

Patina vs rust: how to tell them apart

This is the question most people actually arrive with. The test is largely visual and tactile.

Will your knife develop a patina at all?

Probably not, if it is a modern kitchen knife. Patina needs exposed carbon steel with little or no chromium. Once a steel contains roughly 11–13% chromium or more it forms an invisible passive chromium-oxide film instead, and that film prevents the dark iron oxide from taking hold.

Steels that patina: traditional Japanese shirogami (white paper) and aogami (blue paper) carbon steels, Western carbon steels such as 1095, and the soft carbon cladding on some kurouchi and san-mai blades.

One point that catches people out: a Damascus blade's swirling pattern is often revealed by an acid etch during manufacture. Is a patina good or bad?

On a carbon-steel knife, mostly good — with honest caveats.

In its favour: a settled patina is genuinely protective, slowing the red rust that bare carbon steel is otherwise very prone to. It is free, it forms by itself through normal use, and it gives the blade a character no factory finish can copy.

Against it: a very young patina can transfer a faint metallic tang to delicate ingredients for the first few weeks. It is uneven and often blotchy, which not everyone likes. And it is not armour — a patinated blade left wet overnight will still rust. It also disappears at the cutting edge every time you sharpen, because sharpening removes steel.

Forcing a patina deliberately

Some owners of carbon-steel knives prefer to establish an even patina from the start rather than let a patchy one develop. The usual method is a mild food acid. This only works on carbon steel — it will do nothing to a stainless blade.

Degrease the blade with washing-up liquid and dry it. Coat the flats thinly and evenly with yellow mustard, or stand the blade in warm white vinegar or strong black coffee. Leave it 20 minutes to a couple of hours, checking as you go. Rinse, dry thoroughly, and rub in a drop of food-safe mineral or camellia oil.

Keep the acid off the handle, particularly a natural-wood or pakkawood handle, and skip the harsh chemical blackening solutions sold for tool restoration. They are unnecessary for a kitchen knife and some are not things you want near food.

Living with a patina: the care routine

Whether your blade is patinated carbon or stainless, the routine that keeps it right is the same and takes about ten seconds.

Wipe as you go. Don't leave acidic food residue sitting on the steel between tasks.
Hand-wash and dry immediately. Never the dishwasher — the heat, detergent and long wet cycle are bad for the steel and worse for the handle.
Store it dry and protected. A scabbard, magnetic rack or knife block, not loose in a damp drawer.
Oil occasionally. A thin film of mineral or camellia oil if the knife is carbon steel or being put away for a while.
Don't scour a patina you want to keep. Abrasive pads and scouring powders will strip it straight back to bare steel.

If it turns out to be rust

Work gently and stop as soon as the orange has gone. A paste of bicarbonate of soda and water on a soft cloth lifts light surface rust without scratching. A wine cork dipped in a little bicarb works well for stubborn spots because cork is softer than the steel. Only reach for a very fine abrasive if there is real pitting, and accept that it will alter the finish. Afterwards, dry the blade completely and store it somewhere dry — recurring rust is nearly always a storage problem, not a steel problem.
