The short answer
A gas hob heats a narrow ring rather than the whole pan base, so the thing that matters most is how well your cookware spreads that heat sideways. Look for a flat, reasonably thick base and a pan sized to your burner. Stainless steel with a conductive core, cast iron and hybrid stainless pans all work well; thin, warped or heavily domed pans do not.

Gas hobs are popular for a good reason: the heat is instant, and you can see exactly how much of it you are applying. Turn the dial down and the pan responds within a second or two, which is why so many cooks prefer gas for anything that needs control — a delicate sauce, a stir-fry, melting chocolate.
But gas has one characteristic that shapes what cookware suits it, and most buying guides skip straight past it.
Why a gas hob asks something different of a pan
An induction zone heats the pan base more or less uniformly across its whole diameter. A gas burner does not. It puts a ring of flame under a relatively small circle in the middle, and the outer part of your pan is heated only by conduction outwards through the metal.
That has three practical consequences:
- The base has to conduct sideways well. A pan that cannot move heat outward gives you a scorching centre and a cool rim — the classic gas-hob pancake with a burnt middle and pale edges.
- Flat matters more than thick. A base that is warped or domed sits unevenly on the trivet, wobbles, and touches the heat unpredictably.
- Pan size and burner size need to roughly match. A large pan on a small burner will never heat evenly, no matter how good the metal is.

The thing most people get wrong about non-stick on gas
It is not the hob that damages a non-stick surface — it is empty preheating and flames curling up past the base onto the sides. Match the pan to the burner
On most UK domestic gas hobs the large burner is roughly 9–11cm across and the standard burners are around 6–7cm. Some overhang is completely normal and fine — the pan conducts heat outward. A big mismatch is not.
As a rule of thumb: use your largest burner for pans of 26cm and up, and your standard burners for 20cm and 24cm pans. If your hob only has small burners, a 24cm pan will cook more evenly than a 28cm one even if you are feeding four — you are better off cooking in two batches than fighting a cold rim. Being straight about it: if what you want is the hardest possible sear on a gas flame, a heavy cast-iron skillet will still beat a hybrid stainless pan on sheer heat retention. What it will not do is heat quickly, weigh little, release eggs, or go in the dishwasher. Most kitchens want the second set of qualities more often than the first.
Keeping gas-hob cookware in good shape
- Keep the flame under the base. Flames licking up the sides do nothing useful and are the main cause of discoloured, degraded pans.
- Do not preheat empty on full gas. Concentrated flame on a dry pan is what warps thin bases and damages coatings.
- Let it cool before washing. Cold water into a very hot pan is what causes warping, and a warped base never sits flat on a trivet again.
- Skip abrasive pads and steel wool. Baking soda paste lifts most stainless-steel discolouration without scratching.
- Check the trivets. A bent or unstable pan support will make even a perfect pan cook unevenly.
- Store dry. Stack with a cloth or pan protector between pans to stop the bases scoring each other.
Frequently asked questions
What is the best type of pan for a gas hob?
Stainless steel with a conductive core is the best all-rounder, because a gas burner heats only a ring in the middle of the pan and that construction spreads the heat outwards. Cast iron is better again for searing but slow to heat and heavy. The one to avoid is thin aluminium, which warps on a concentrated flame.
Can a pan be bigger than the gas burner?

Why does my pan burn in the middle on gas?
Because the burner is heating a small circle and the pan is not conducting that heat outwards fast enough. It is usually a sign of a thin or bare base with no conductive core, or of a pan much larger than the burner. A thicker base or a smaller pan will fix it.
Do induction pans work on gas?
Yes. Induction compatibility just means the base is magnetic, which does not stop it working over a flame. Pans described as suitable for gas, induction and electric — including the whole Hive Hybrid range — work on all three.
Does cookware warp on a gas hob?
It can, and gas makes it more likely than induction because the heat is concentrated in one spot. The two things that cause it are preheating a thin pan empty on a high flame and plunging a very hot pan into cold water. Let pans cool before washing and warping is rarely an issue.
